Newest Offering - Dinners for 4

I believe in preparing my dishes with the "Changing Seasons" as my inspiration.  But I have been known to “cheat” and throw a fresh Raspberry on top of a Ganache Cake or at the center of my Pineapple Upside down cakes in the Winter months. 

These are just a few of my baked goods offerings. The menu changes on a weekly basis. Click on any thumbnail for a larger image or click on a link from the menu listing.

Tarts

RUSTIC APPLE TART - This Is my most popular item. Jonagold apples baked with spices in a rustic tart form with flaky crust brushed with special glaze.

RUSTIC STRAWBERRY TART - These tasty treats are made with sweet juicy strawberries.  I offer them with and without chocolate ganache drizzled on top. 

RUSTIC PINEAPPLE TARTS - I am going tart crazy. I enjoy the vision of these golden sweet pineapple tarts wrapped in flaky pastry set up next to all my other tarts. I like the idea of all those jewel tones. This is of course made with fresh Pineapple.

APRICOT ALMOND TART - Ground almonds topped with a tasty Apricot spread.  I put out samples of these last time I offered them.  They were so popular that I sold out of all that I made and ended up selling the rest of the uneaten samples.  That's pretty popular!  

BLUEBERRY RUSTIC TARTS - Yup...its true, I am bringing out the BLUES!  Just a very small Summer preview peak of wonderful Summer treats to come.

RUSTIC ANJOU PEAR TART - Tender juicy fragrant pear slices with just a hint of sweetness.

CHAMPAGNE MANGO TARTS - Have you tried Champagne Mangoes?  Oh my!  What an amazing treat.  One of my lovely customers turned me on to these.  I will use these as long as I can continue to find them.  I made these "sublime" tarts for  my son Frank and his family.  They were very popular.  I  now offer them to you.  Very sweet perfumy slices of fresh  mango baked in a flaky crust. 

Meringue Tarts are hand held flakey little tarts topped with tangy lemon curd, banana cream pudding, chocolate puddings, fresh cranberry curd, coconut cream to name a few....all topped with a beautiful fluffy lightly golden crown of tender meringue. 

Cakes

BANANA CAKE WITH CHOCOLATE FROSTING - What's there to say??? Bananas and Chocolate are such a delicious combo.  Moist 3 layer banana cake spread with my very favorite Cocoa Frosting.

YELLOW CAKE W/ CHOCOLATE FROSTING - Single layer whole and mini cakes- By request…I once read that this is the most popular requested birthday cake.  Makes sense, it’s pretty tasty!

BANANA CAKE with CARAMEL FROSTING - Triple layer and mini banana cakes light fragrant moist banana cakes with yummy caramel frosting. I was thinking "Bananas Foster" in a cake form.

ORANGE CAKE with BUTTERCREAM FROSTING - Mini Orange Cakes - I am really partial to a good moist orange cake.  I love this citrus cake in January when the oranges are so flavorful.

CHOCOLATE GANACHE CAKE - Single layer whole and mini cakes - You must try this delicious chocolate buttermilk cake topped with decadent chocolate glaze, a mint leaf and a fresh raspberry.

BROWN SUGAR POUND CAKE - Delicious pound cake  with toasted pecans baked in and topped with a velvety Cream Cheese  icing dripping down the sides.    

VANILLA CAKE SUPREME - I have been asked to create a spectacular all white birthday cake for Audrey's 6 year birthday party.  Her Mom Jeanine will be decorating her cake with fresh Lilacs from their garden.  Her daughter asked for a "Nature Cake".  A girl after my own heart!

LEMON CHEESECAKE - Swirls of lemon filling mixed with cream cheese goodness.  Very pretty party cake.  

CARROT CAKE with CREAM CHEESE FROSTING - Packed with pineapple, coconut, raisins and carrots.  And yummy swirls of cream cheese frosting. The Carrot Cake will be offered as a 3 layer cake and miniature delights.

COCONUT CHOCOLATE COFFEE CAKE - Unsweetened coconut tops this luscious coffee cake with Italian bittersweet chocolate chunks.

PINEAPPLE UPSIDE DOWN CAKE - Classic! My twist Is fresh pineapple studded with fresh raspberries to replace those Maraschinos.

MINI YELLOW CAKES WITH CHOCOLATE GLAZE - This is a very moist cake with a delicious rich glaze.

TEXAS CITRUS GRAPEFRUIT CAKE - Ruby red grapefruits are one of our favorites.  This is a great time of year to enjoy them in this unusual but tasty cake.  

Pies

PEAR PIE W/ STREUSEL TOPPING - Succulent pears bakes with a delicious cinnamon streusel topping.  Try this warm with ice cream.

SOUR CREAM APPLE PIE - This is my favorite apple pie. Baked in a custard with chunky apples and spices it is irresistible! Pat says: My husband and son thought this was the best apple pie they had ever tasted.

CUSTARD PIE with NUTMEG - I made this pie for me. Doesn’t a simple little custard sound appealing after the Holidays? I think so.

BLUEBERRY PIE - Just the blues in this pie topped with my very flaky piecrust.  A little fresh lemon juice and hint of zest completes this Summer offering. NOTE from Pat. We took this one to a family get-together last Sunday and it met with rave reviews and was devoured.

FRESH STRAWBERRY PIE - This is a sneak preview of Spring!  A colossal pile of fresh strawberries glazed and piled into a flaky piecrust.

BOSTON CREAM PIE - Another Classic. Layered yellow cakes Filled with vanilla custard and topped with chocolate frosting.

PEANUT BUTTER FUDGE PIE - What a classic combo!  Peanut butter pie foundation smothered with a chocolate fudge topping.

Hand Pies

CARAMEL APPLE HAND PIES - Jonagold apples baked into flaky piecrust with a dollop of caramel. We will have some Apples without caramel too if you prefer.

BLACKBERRY HAND PIES - Flaky crust surrounds very fat juicy blackberries.

DARK CHERRY HAND PIES -  We made Cherries Jubilee with these same type of cherries on Christmas. Flames and all...but these will have that great taste minus the flames.

Bar Cookies

IRISH MINT BROWNIES - These are a chocolate brownie layered with a mint cream layer and topped with bittersweet chocolate glaze and a chocolate mint candy on top.

MISSISSIPPI MUDD BARS - Long time favorite of mine.  I am crazy about toasted marshmallows.  This is a nice chocolatey treat with toasted pecans, marshmallows on top that get a quick oven and glazed all over with a cocoa drizzle.  Very gooey!

ALMOND CHOCOLATE CHIP BARS - Yes, this is my little "Gimmick". I sell these tasty treats glazed with chocolate and tossed with toasted almonds.

MOCHA BROWNIES - Recently someone was asking for brownies.  So here is a chocolaty mocha version topped with chocolate coffee beans.   

WHITE CHOCOLATE MACADAMIA NUT BLONDIES - This is for my daughter Robin.  Blondies were featured on Bobby Flays showdown and she has wanted them since. This is like a non-chocolate brown sugar "brownie" loaded with white chocolate and macadamias.

Muffins, Breads, and Scones

CINNAMON BUTTERMILK DONUT MINI MUFFINS - Always a very popular item. Moist little muffins dipped in melted butter and cinnamon sugar.

CRANBERRY OAT SCONES - Sweet dried cherries baked into my famous oat scones.  These will melt in your mouth! 

PINEAPPLE COCONUT MACADAMIA NUT BREADS - Tropical getaways come to mind when it's cold out and I am enjoying one of these tasty treats with my morning tea.

LEMON MUFFINS - I couldn’t resist including lemons when they are so beautiful this time of year. Sometimes I bake them as mini muffins so you can eat more than one. These are low fat with a bright lemon glaze drizzled over the top.  But most people buy them just because they taste so good.

STRAWBERRY MUFFINS - Fresh strawberries baked into a sweet muffin batter.  I couldn't resist. Strawberry season is so close at hand.

PECAN DATE CINNAMON ROLLS with MAPLE GLAZE - this Is my twist on my Grandmas famous "Cinnamon Rolls". They are actually made with biscuit dough. I stuff these with Medjool dates and toasted pecans with a maple syrup glaze drizzled on top.  

JALAPENO CHEESE SPOONBREAD - I love Southern Spoonbread.  I have given it a twist with Jalapenos and cheese.

JALAPENO CORN MUFFINS - Pepperjack cheese adds creamy goodness and kick to these cornmeal muffins.  We love them with Chili.

SWEET POTATO SUGAR PECAN MUFFINS - Delicious southern flavors to enjoy as a tasty snack or for breakfast with your tea and coffee.

Beverages

HOT CHOCOLATE with MARSHMALLOWS - My special cocoa mix with homemade marshmallows.  Served  hot.

LEMON ZINGER HONEY MINT TEA - Served iced.  I made a big batch of this tea to sustain me during my long baking hours.  We all became addicted to this herbal offering with fresh mint from my garden.

RHUBARB LEMONADE - Does it seem like I am getting a bit carried away with Rhubarb?  It's probably true.  But I just LOVE Rhubarb.  I am also a big fan of gummy bears and sour worms thanks to my kids.  Rhubarb lemonade has all that great sweet tartness and such a pretty ruby color.  Maybe this is a great intro for those of you out there that are still missing out on this great spring treat. 

Savory Treats

VIDALIA ONION PECAN CHEDDAR MUFFINS - Here is an extra muffin for you from an old issue of Southern Living that was in my Chiropractors office.  I couldn't resist offering it to you.

CABBAGE, POTATO, ONION, CARAWAY CHEDDAR TART - The name says it all. Delicious warmed in your oven or eat it as is. This is now my most requested savory tart.

ASPARAGUS MUSHROOM GOAT CHEESE GALETTE - Something savory for your Springtime lunch.

BLEU CHEESE, TOASTED WALNUTS AND MULTI COLORED CHERRY  TOMATOES TART-The name says it all.  My girls at home  drooled as these golden tarts were pulled out of the oven.

COUNTRY BREAKFAST TARTS - Bacon, sweet onions, sharp cheddar cheese, fresh spinach baked into a yummy savory tart for breakfast or lunch.  (I will also offer these without bacon). Sprinkled with fresh Thyme. Two sizes to choose from.

SAVORY SPINACH TARTS - Back to basics. This was the first savory tart I created and is still a favorite. Spinach, a smear of cream cheese, Sauteed onion, cheddar, fresh thyme and bacon. (We will offer some w/out the bacon).

MEXICAN CASSEROLE - All that talking about Moms good eating made me think of creating a taste treat for you. Layers of fresh simmered Pinto beans topped with Mamas Spanish Rice, Cheddar cheese and my fresh salsa.

Misc Items

PEAR DUMPLINGS - These sell out quickly. Bosc Pears stuffed with macadamia nuts and a lovely sauce made with Citrus Peel. Get them while you can.

WINTER WANDS - Rice crispy treats in a star shape on a wand dipped in chocolate both white and milk. Truly "Magical" and Tasty.

GRANDMAS RICE PUDDING -  I really wanted to make this delicious pudding for you just like my Grandma made it for me.  My Aunt Ann also made it for us at our Texas visit.
